Bulk update user fields on Documents (for when a user leaves)

Have the ability to bulk update user fields (including meta data fields) to change the user for when a user leaves or changes job role.
We have author and reviewer metadata fields as well as the standard owner field.
At the moment not even the owner field is updated if you delete a user. Ideally we don't want to delete a user when they leave, but disable them and there is no option to replace the user in this scenario.
