Increase the metadata options available on the 'People List' component on pages

I would like to add email to the metadata on the people component on our pages but it is not available and there is no way to add it.
The ideal solution would be for all people user profile fields to be available for selection in the 'People List' component (this might get a bit busy) or for a way the admin could make certain ones available.
Also, if the email field was available and when added became an active link to launch an email to the designated person, that would be ideal.
